Sometimes hummus just doesn’t cut it. The next time your snack needs a tangy, flavorful boost, whip up this spicy squash dip. Like hummus, this concoction comes together quickly and easily in a blender, but it one-ups the chickpea spread with bursts of bold, zesty flavor. Bonus? It’s made with good-for-you ingredients, so you can snack without spoiling your dinner.

Pumpkin Squash Dip

Spicy Squash Dip

Ingredients

1 cup pumpkin
1 cup zucchini, chopped
1/4 cup tahini
1 clove garlic, diced
Juice of 1 medium lemon
2 Tbsp. extra virgin olive oil
1 tsp. ground cumin
Ground cayenne or chipotle pepper, to taste, optional
1/3 cup fresh parsley, chopped, for garnish

Directions

  1. In a high-speed blender or food processor, combine all ingredients.
  2. Process until smooth and creamy.
  3. Serve as a dip for veggies or as a sandwich spread.
