Spicy Sweet Potato Hash
Ingredients
4 medium sweet potatoes, cubed
1 onion, chopped
1 garlic clove, diced
½ tsp. turmeric, plus more, if desired
½ tsp. chili or chipotle powder, plus more, if desired
Juice of ½ lemon
Extra virgin olive oil
2 Tbsp. fresh parsley, chopped
Pinch of sea salt, optional
Directions
- In a medium-size skillet over medium heat, heat olive oil. Add garlic and onions and sauté until fragrant.
- Add sweet potatoes and stir in turmeric, chili powder and lemon juice. Add more oil, spices and sea salt, if desired.
- Cook until all sides of potatoes are crispy.
- Remove from heat and add fresh parsley.
