For anyone who has fallen to the thralls of a low-carb diet, you learn to accept the fact that bread is off-limits. Sandwiches are a no-go. And many convenient breakfast options are banned. It’s a somewhat mournful meal plan, but you’re committed. As admiral as that is, you deserve to break bread every now and then. So before the itch to binge creeps up, nibble on this low-carb, high-protein treat. The strawberries-and-cream bundt ring is a nice cross between monkey bread and cake. Take that, carbs!
Strawberries & Cream Protein Cake
Ingredients
½ cup oat flour
4 scoops Quest Strawberries & Cream Protein Powder
1 cup coconut milk
1 cup water
1 Tbsp. coconut butter
1 ½ tsp. baking powder
freeze dried strawberries
4 egg whites
Directions
- Preheat oven 350 degree F and coat a bundt pan with non-stick cooking spray.
- In a large bowl, combine all ingredients and stir until well-combined.
- Bake for 35 minutes, or until a toothpick comes out clean.
