Stuffed peppers will pump up the flavor of your tacos—and they’re better for you, too! This simple recipe offers a quick and easy way to make your tacos the talk of the town.

Stuffed Hemp Tofu Taco Peppers

Ingredients

3 pasilla peppers, cut in half and grilled
1 package hemp tofu crumbles
1-2 Tbsp. olive oil, plus more for drizzle
1-2 limes
1 onion, diced
Cumin
Chili powder
Pinch of sea salt, optional
Cilantro, optional, for garnish
Jicama, diced, optional, for garnish
Cashew cheese, optional, for garnish

Directions

  1. Preheat oven to 450 degrees F.
  2. On a baking sheet, drizzle oil over the halved peppers and bake for approximately 10 minutes, until slightly charred or desired crispiness is reached.
  3. Meanwhile, in a sauté pan over medium heat, lightly sauté onions in olive oil. Add hemp tofu crumbles, cumin, chili powder and freshly squeezed juice from limes. Cook for about 5 minutes or until lightly browned.
  4. Stuff peppers with tofu mixture and top with desired garnishes.
