This sweet treat is fruity and refreshing, which is perfect for springtime celebrations. Since each batch makes 16 bars, it’s an ideal dish to share with loved ones. Dress up these lime-green squares with lime wedges, walnuts or whipped coconut cream.
Yields 16 squares
Ingredients
1/4 cup unsalted butter, softened
1/4 cup plus 2/3 cup Simple Truth Organic Sugar
1 Tbsp. Simple Truth Organic Powdered Sugar
3 eggs
1/8 tsp. lemon extract
1 cup plus 3 Tbsp. flour
3/4 tsp. baking powder
1/2 cup fresh key lime juice
1/4 tsp. salt, divided
Zest of one lime
Cooking spray
Directions
- Preheat oven to 350 degrees F.
- Using a mixer, blend butter, lime zest, lemon extract, 1/4 cup sugar and 1/8 teaspoon salt at medium speed until creamy; about 3 minutes.
- Gradually add 1 cup flour to butter mixture, beating at low speed until mixture resembles coarse meal.
- Coat an 8-in square baking pan with cooking spray. Gently press two-thirds of the mixture into bottom of pan. Set remaining flour mixture aside. Bake for 10-12 minutes or until brown.
- In bowl, use whisk to combine remaining sugar, remaining flour, remaining salt and baking powder. Add lime juice and eggs, stirring until smooth.
- Pour mixture over crust and bake for 12 minutes. Remove pan from oven (do not turn the oven off); sprinkle remaining flour mixture evenly over the egg mixture. Bake an additional 8 minutes or until set.
- Remove pan from oven and cool on a wire rack. Sprinkle with powdered sugar. Cut into 16 squares and serve.
