For many, St. Paddy’s day consists of emerald-green beverages and traditional Irish fare. After all, indulging in these annual treats is part of the fun. But if you’re committed to your healthy diet, your options may seem limited. Avoid giving into temptations with this healthy, dessert-like shake made from creamy frozen bananas, fresh mint, almond butter and more. The best part? This refreshing and festive smoothie beats those sugar-laden, limited edition fast food versions on every level. Topped, with coconut whip and vegan chocolate chips, you’ll want to enjoy this smoothie all year long.
Ingredients
1/2 cup water
2 bananas, peeled & frozen overnight
3 Tbsp. hemp seeds
1 Tbsp. almond butter
2 Tbsp. fresh mint or 1/2 tsp. mint extract
1 cup baby spinach
1 date, pitted, optional for added sweetness
Topping
1 can coconut milk, refrigerated overnight
1-2 tsp. Vitacost Semi-Sweet Chocolate Mini-Chips
Directions:
- In blender, combine smoothie ingredients on high for 60 seconds or until smooth. Taste. If added sweetness is desired, add a date and blend again. Pour into glass.
- Open refrigerated coconut milk can (cream should have floated to the top). Use spoon to dollop about a tablespoon of coconut cream on top of the smoothie. (Refrigerate remaining coconut cream and liquid in air-tight for future use.)
- Sprinkle dark chocolate chips on top.
Tip: The night before, peel two ripe bananas, break them in half, place in a bag or food storage container, and freeze overnight.
