Remember those TV shows with the magical witch who could just blink or snap her fingers and have an entire dinner ready in a jiffy? Sadly, for us mortals, meal prep is just not that easy. We can’t make gourmet dinners appear out of thin air, but we can put together an entire meal quickly and with little elbow grease. Like a rabbit from a top hat, this quick-and-easy recipe will wow your dinner guests and have them begging you to reveal the trick. There’s no wizardry, just a delicious culinary combination of spicy lentils and garlicky carrots and onions, topped off with a tangy red wine vinaigrette that’s sure to cast a mesmerizing spell over mortals and witches alike.
Veggies & Green Lentils with Red Wine Vinaigrette
Ingredients
1 cup petite French green lentils
1 cup diced carrots (about 2)
1 cup thinly sliced onion (about ½ a large onion)
1 tsp. garlic, minced
1 bay leaf
2-½ cups water
2 Tbsp. olive oil
Vinaigrette
¼ cup olive oil
2 Tbsp. red wine vinegar
1 Tbsp. Dijon mustard
1 tsp. ground black pepper
1 tsp. salt
Directions
- Sort and rinse lentils. In a pot, combine water, lentils and bay leaf and bring to boil. Reduce to simmer and cook for 20 minutes, until lentils are soft.
- Meanwhile, in a sauté pan or skillet over medium heat, heat 2 tablespoons of olive oil. Add carrots and onions and sauté about 10 minutes, or until onions are soft. Add garlic and cook for another minute.
- In a small mixing bowl, whisk together vinaigrette ingredients.
- Drain lentils and remove bay leaf. In a large mixing bowl, combine lentils, carrot and onions. Pour dressing all over. Serve warm.
