French Green Lentil Recipe

Veggies & Green Lentils with Red Wine Vinaigrette

1 cup petite French green lentils
1 cup diced carrots (about 2)
1 cup thinly sliced onion (about ½ a large onion)
1 tsp. garlic, minced
1 bay leaf
2-½ cups water
2 Tbsp. olive oil

¼ cup olive oil
2 Tbsp. red wine vinegar
1 Tbsp. Dijon mustard
1 tsp. ground black pepper
1 tsp. salt

  1. Sort and rinse lentils. In a pot, combine water, lentils and bay leaf and bring to boil. Reduce to simmer and cook for 20 minutes, until lentils are soft.
  2. Meanwhile, in a sauté pan or skillet over medium heat, heat 2 tablespoons of olive oil. Add carrots and onions and sauté about 10 minutes, or until onions are soft. Add garlic and cook for another minute.
  3. In a small mixing bowl, whisk together vinaigrette ingredients.
  4. Drain lentils and remove bay leaf. In a large mixing bowl, combine lentils, carrot and onions. Pour dressing all over. Serve warm.
