Whole Grain Tuna Salad with Lemon-Honey Dressing

In this salad, not only are you getting the wholesome goodness of grains and legumes, but also a punch of savory flavor. Slightly salty tuna, tart apples and sweet tarragon are mixed with grains and infused with a lemon-honey dressing for a dish that’s sure to delight your senses.

Tuna Salad with Apples, Walnuts and Tarragon

Whole Grain Tuna Salad with Lemon-Honey Dressing

Ingredients

1 cup Bob’s Red Mill Whole Grain Medley
1 cup diced apple (about 1 medium Fuji or Braeburn)
½ cup Bob’s Red Mill Petite French Green Lentils
½ cup diced celery (about 2 stalks)
¼ cup walnut pieces, toasted
¼ cup torn tarragon
¼ cup diced sweet onion
3 cups water, divided
8 oz. canned tuna

Lemon-Honey Dressing

1 tsp. lemon zest
½ tsp. minced garlic
½ tsp. salt
¾ cup extra virgin olive oil
2 Tbsp. lemon juice
1-½ tsp. honey
¼ tsp. mustard

Directions

  1. In a medium pot over high heat, bring 3 cups of water and Whole Grain Medley to a boil. Cover and reduce heat to simmer. Cook for 60-90 minutes, until grains are soft. Drain and set aside to cool.
  2. In a small pot, bring remaining cup of water to boil. Add French Green Lentils and reduce heat to simmer. Cook for 20-30, until lentils are soft. Drain lentils and set aside to cool.
  3. Prepare the dressing. In a blender or food processor, process lemon zest, garlic, salt, lemon juice, honey and mustard until smooth. Add olive oil and process for 5 additional minutes. Set aside.
  4. In a large bowl, combined cooled grains with apple, celery, walnuts, tarragon, onion and tuna. Pour dressing in bowl and mix until well combined.
