Ingredients
  • 1 large hatch green chile minced
  • 3 slices bacon cooked
  • 3 eggs beaten
  • 3 cloves garlic minced
  • 1 Tbsp. ginger minced
  • 1 avocado sliced
  • 3 green onions white tips and greens sliced
  • 2 cups white rice cooked
  • 1 tsp. sesame oil
  • 1 Tbsp. soy sauce
  • 1/2 tsp. salt
  • 1/2 tsp. msg optional
  • 1/2 tsp. pepper
Instructions
  1. Heat wok or large skillet on high heat with oil.
  2. Add hatch chile and cook for 2 minutes. Add ginger, garlic and whites of green onion. Sauté for 1 minute.
  3. Add rice, salt, soy sauce, msg, sesame oil and pepper. Mix until well incorporated.
  4. Add eggs and mix into the rice and cook for 2 minutes. Add cooked bacon.
  5. Garnish with sliced avocado and green onions.
