Ingredients
For jackfruit pulled pork

  1. In bowl, using forks, shred jackfruit into thin pieces.
  2. In pan over medium heat, heat olive oil and sauté onion and garlic until semi-caramelized.
  3. Once onion is fragrant and soft, mix in shredded jackfruit and cook about 5 minutes.
  4. Season with smoked paprika, cumin, salt and pepper. Mix well.
  5. Add barbeque sauce, mix well and cover with lid. Reduce heat to low and let simmer 20-30 minutes until jackfruit becomes tender and infused with flavors. (Note: Taste occasionally, adjust and stir.)
  6. On buns, add jackfruit, julienned onions and cabbage.
