Brussels Sprouts Slaw With Pomegranate Dressing

  • Extra pomegranate arils for garnishing
  • Sunflower seeds
  • Crumbled feta cheese
Instructions
  1. Using food processor, grater, mandoline or knife, shave Brussels sprouts and red cabbage into thin slices.
  2. Place Brussels sprouts, cabbage and pomegranate arils in mixing bowl. Toss to combine.
  3. In small bowl, whisk together Dijon mustard, pomegranate syrup, apple cider vinegar, olive oil, salt and pepper.
  4. Pour dressing over shaved vegetables and toss. Season generously with fresh ground pepper.
  5. Store salad in refrigerator until ready to serve.
  6. Serve as is or top with extra pomegranate arils and a drizzle of pomegranate syrup.
