Ingredients
- 1 lb. Brussels sprouts trimmed and shaved thinly
- 1/2 bulb red cabbage sliced thinly or grated
- 1 cup pomegranate arils
- 1 Tbsp. Dijon mustard
- 5 Tbsp. pomegranate syrup
- 3 Tbsp. apple cider vinegar
- 6 Tbsp. olive oil
- 1 tsp. natural salt
- Generous amount fresh ground pepper
Optional Toppings
- Extra pomegranate arils for garnishing
- Sunflower seeds
- Crumbled feta cheese
Instructions

Using food processor, grater, mandoline or knife, shave Brussels sprouts and red cabbage into thin slices.

Place Brussels sprouts, cabbage and pomegranate arils in mixing bowl. Toss to combine.

In small bowl, whisk together Dijon mustard, pomegranate syrup, apple cider vinegar, olive oil, salt and pepper.
