Instructions
  1. Preheat oven to 400 degrees F.
  2. Season chicken with salt, pepper and dried herbs on both sides.
  3. Heat large cast iron skillet over medium heat and place chicken skin side down.
  4. Cook five minutes or until skin is browned. Flip chicken and turn heat off.
  5. In medium mixing bowl, combine cherries, garlic, olive oil, balsamic vinegar and a sprinkle of salt.
  6. Pour cherry mixture over chicken and place skillet in preheated oven.
  7. Roast 40 minutes or until chicken is cooked through. (Note: Use a meat thermometer to check that chicken is 165 degrees F.)
  8. Serve chicken with cherries and sauce.
