  1. Preheat oven to 350 degrees F. Line 8x8” baking dish with parchment paper.
  2. In large mixing bowl, with mixer on high speed, beat together butter and coconut sugar for 2-3 minutes.
  3. With mixer on low speed, add one egg at a time until mixed well.
  4. Slowly mix in melted chocolate chips until well combined.
  5. Mix in mint and vanilla extract.
  6. With spatula, stir in cacao powder, oat flour, almond flour, salt and baking powder until just combined.
  7. Spoon mixture into prepared pan and sprinkle with chopped pistachios.
  8. Bake 25-35 minutes or until toothpick inserted in center comes out mostly clean.
  9. Let cool before serving.
