Instructions
  1. In a large bowl, add almond flour, flaxseed meal, applesauce, almond butter and maple syrup. Using a spatula and your hands if needed, mix ingredients together until they are incorporated and the dough forms into a big ball. Chill dough 15 minutes in refrigerator.
  2. Using small cookie scoop, scoop around 9 even balls and roll them until perfectly round.
  3. Insert popsicle stick into each ball and place on a tray lined with parchment paper.
  4. Chill in freezer for about 30 minutes.
  5. Meanwhile, using a microwave or a double boiler, melt white chocolate chips until smooth and completely melted.
  6. Dip each ball into melted white chocolate, covering each ball completely.
  7. Finish with sprinkles and place on cake pop stand or into a glass until chocolate sets and hardens.
  8. Serve immediately or freeze for later.
