Ingredients
Turkey Meatloaves
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1/2 cup cucumber grated using large holes of grater box
  • 1 garlic clove grated
  • 1-1/2 Tbsp. fresh dill chopped
  • 1 Tbsp. mint chopped
  • 1 Tbsp. lemon juice
  • 1 Tbsp. olive oil
  • Salt to taste
  • White pepper to taste
Instructions
  1. Preheat oven to 400 degrees F.
  2. Place grated cucumber in towel and squeeze to remove excess water.
  3. In medium bowl, add Greek yogurt, cucumber, garlic, dill, mint, lemon juice and olive oil. Stir gently until combined. Add salt and white pepper to taste.
  4. Cover and refrigerate tzatziki sauce until ready to serve.
  5. In small bowl, combine panko bread crumbs and milk. Let sit for at least 5 minutes.
  6. In large bowl, combine ground turkey and milk-soaked bread crumbs. Add remaining meatloaf ingredients and mix until well combined.
  7. Form 10 mini loaves of equal size; arrange on baking sheet lined with parchment paper.
  8. Bake 20-25 minutes or until loaves reach an internal temperature of 165 degrees F.
  9. Serve warm with tzatziki sauce.
