  1. Toss butternut cubes with olive oil, salt, pepper and garlic powder. Roast at 400 degrees F for 25– 30 minutes until soft and caramelized.
  2. Boil pasta according to package instructions. Reserve about 1/4 cup of pasta water before draining.
  3. In large pan or mixing bowl, add cooked pasta, roasted squash and 1/2 cup of pesto.
  4. Adjust salt and pepper to taste, sprinkle with freshly grated parmesan and fresh basil leaves.
Pesto
  1. Add all ingredients to high speed blender and pulse until well combined.
