Try this baked fish dish enlivened with thyme, marjoram and citrus peels topped with oven-crisped panko breadcrumbs. Ingredients
1 pound mahi mahi fillets
1/2 cup panko breadcrumbs
3 Tbsp. ghee, melted, or extra-virgin olive oil
2 tsp. Frontier Lemon Peel
2 tsp. Frontier Orange Peel
1/2 tsp. Frontier Thyme Leaf
1/2 tsp. Frontier Marjoram Leaf
Directions
- Preheat oven to 425 degrees F. Rinse fish and pat dry.
- In baking dish, add ghee or olive oil and citrus peels, stirring to mix. Press both sides of fish into mixture to coat, then lay fillets in baking dish.
- Bake 20 to 25 minutes, until fish is opaque and flaky. Meanwhile, in small dish, combine breadcrumbs and herbs.
- When fish is done, remove from oven and set oven to broil. Add panko mixture to liquid in baking dish, stirring to coat. Spoon panko mixture onto fillets and return dish to oven. Broil for a little over a minute, until topping is well browned. Remove fillets from pan and serve.
