Everyone’s over pudding in little foil-topped plastic tubs. On today’s dessert menu is a creamy, seed-studded treat that satisfies a sweet tooth without squashing healthy-eating efforts. The secret? It’s in the chia. These itsy-bitsy babies are bursting with protein, omegas and fiber – but even better, they soften when soaked, swelling into pudding-perfect thickness no one can resist. And you don’t have to! Sprinkle on some fruit and serve this stuff for breakfast. There’s no sweeter start to the day.

Vanilla Chia Pudding Recipe (Raw & Vegan)

Ingredients

3/4 cup chia seeds
4 cups almond milk
Dash of vanilla
1 Tbsp. maple syrup

Directions

1. Combine all ingredients (except fruit) in blender;  mix on low.
2. Pour mixture into a mason jar and shake to evenly distribute chia seeds.
3. Refrigerate for up to four hours.
4. Top with fresh fruit.
