In this concoction, chia seeds, lemon and mint are frozen together to make a visually stunning and tasteful combination that’s perfect for tossing in the blender with your favorite smoothie recipes. Alternatively, you can add the cubes to a glass or water dispenser to create your own sophisticated spa water blend.
Why chia? The health benefits of chia seeds are numerous; they add protein, fiber and fatty acids to your fave food or beverage. They not only soak up moisture (gelling up to keep you hydrated and feeling full), they also take on the flavor of whatever you add them to — like refreshing lemon and mint, for instance!
Ingredients
1 Tbsp Vitacost chia seeds
1-2 cups water
1/3 cup mint leaves, chopped
Juice of 1 lemon
Zest of 1 lemon
Optional: Pinch Vitacost cayenne pepper
2 ice cube trays or 4 mini ice cube trays
Directions
1. Add lemon juice and water to small bowl.
2. Soak chia seeds and mint in lemon water for 15 minutes.
3. Pour into ice cube trays and sprinkle with lemon zest and cayenne.
4. Freeze, then enjoy in smoothies or add to mason jars or carafe to create a spa-worthy sip.
