Bake your heart out with these citrus-y cookies when you’re in need of a sweet snack. That’s right, you can get in shape and eat your desserts, too! Made with juicy key limes, grass-fed ghee and other natural ingredients, these cookies are the kind of treats you won’t feel guilty munching on!

Homemade Paleo Key Lime Cookies | Vitacost.com/Blog

Makes 36 cookies

Ingredients
3/4 cup Vitacost Organic Coconut Flour
1-1/2 tsp. baking powder
1/4 tsp. salt
6 Tbsp. grass-fed ghee or butter, melted
1/3 cup Vitacost Organic Coconut Oil
3/4 cup agave
4 large eggs
1 Tbsp. almond milk
1 Tbsp. pure lime juice
1 tsp. vanilla
Zest of 1 lime or 2-3 key limes

Directions

  1. Preheat oven to 375 degrees F. In bowl, combine coconut flour, baking powder and salt.
  2. In another bowl, beat together butter and coconut oil. Add agave and mix. Add eggs, almond milk, vanilla, lime juice and zest and beat well.
  3. Add dry ingredients to wet mixture and beat until combined and batter is thick. Scoop three dozen small, flattened balls onto ungreased cookie sheet.
  4. Bake 8-10 minutes or until edges start to brown. Remove from oven and cool before serving.
