Bake your heart out with these citrus-y cookies when you’re in need of a sweet snack. That’s right, you can get in shape and eat your desserts, too! Made with juicy key limes, grass-fed ghee and other natural ingredients, these cookies are the kind of treats you won’t feel guilty munching on!
Makes 36 cookies
Ingredients
3/4 cup Vitacost Organic Coconut Flour
1-1/2 tsp. baking powder
1/4 tsp. salt
6 Tbsp. grass-fed ghee or butter, melted
1/3 cup Vitacost Organic Coconut Oil
3/4 cup agave
4 large eggs
1 Tbsp. almond milk
1 Tbsp. pure lime juice
1 tsp. vanilla
Zest of 1 lime or 2-3 key limes
Directions
- Preheat oven to 375 degrees F. In bowl, combine coconut flour, baking powder and salt.
- In another bowl, beat together butter and coconut oil. Add agave and mix. Add eggs, almond milk, vanilla, lime juice and zest and beat well.
- Add dry ingredients to wet mixture and beat until combined and batter is thick. Scoop three dozen small, flattened balls onto ungreased cookie sheet.
- Bake 8-10 minutes or until edges start to brown. Remove from oven and cool before serving.
