Warm Pomegranate-Walnut Winter Salad

Warm salad? Yup! It’s a thing. And it’s actually pretty darn delicious. The perfect blend of sweet, tart and toasty, this winter-worthy salad is perfect for your holiday feast. Plus, it features festive colors from dark-green arugula, ruby-red pomegranate seeds, snowy-hued shallots and golden walnuts. Serve beside a loaf of freshly baked sliced bread as a unique appetizer or side dish.

Ingredients

1/4 cup Vitacost Organic Raw & Unfiltered Honey
1/2 cup Vitacost Organic Balsamic Vinegar
1 Tbsp. stone ground mustard
1 cup extra virgin olive oil
1/2 cup pomegranate seeds
2 Tbsp. shaved Parmesan
1/2 shallot, finely minced
1 cup Vitacost Organic Walnuts, chopped
3-4 cups arugula (or any greens of choice)
Sea salt, to taste
Black pepper, to taste

Directions

1. In sauté pan over medium-high, heat honey and balsamic for five minutes.

2. Meanwhile, toast walnuts in small pan and set aside. Place greens inside large bowl.

3. Whisk mustard and olive oil into honey-balsamic mixture. Pour over greens. Add salt and pepper to taste. Garnish with walnuts, pomegranates, Parmesan cheese and shallots.
