This recipe hardly needs an introduction (seriously… just look at that picture!). Basically, it combines two mouthwatering cuisines – Italian and Indian – to create one crave-worthy dish you’ll want to make over and over again. Serve it to your family as a weeknight meal, present it to your friends for a dinner party appetizer or make it for a no-reason gourmet lunch because… why not?! Chickpeas, pizza and sriracha all taste good on their own, so why not combine them for one meal that joins them all?

Indian-Inspired Chickpea Flatbread

					Ingredients
- 1 14-oz. can chickpeas, drained
- 1 homemade pizza crust or store-bought pizza dough
- 1 green bell pepper , diced
- 1/2 white onion , diced
- 2 garlic cloves , minced
- 1/4 cup tomato paste
- 1/2 cup shredded vegan mozzarella
- 1 Tbsp. vinegar
- 1 Tbsp. maple syrup
- 1 tsp. cayenne pepper
- 1 Tbsp. sriracha sauce
- 1/4 cup coconut aminos
- 1/2 tsp. salt
- 1/4 cup water
- 2 scallions , chopped
- Cilantro
- Avocado oil
Instructions
- 
										Preheat oven 425 degrees F.
- 
										Heat skillet over medium heat, add a little oil, then add onions and bell pepper. Sauté 3-4 minutes, remove from pan.
- 
										In same skillet, add splash of oil followed by chickpeas, garlic, sriracha, tomato paste, cayenne, vinegar, syrup, coconut aminos, salt and water. Cook mixture down to combine for 3-4 minutes. Spoon into bowl.
- 
										Lightly drizzle oil over flatbread. Add vegan mozzarella cheese, onions, peppers and spicy chickpeas.
- 
										Bake 8-10 minutes. Top with fresh cilantro and green onions.
