Summer Carrot Salad with Golden Turmeric Dressing

Ingredients
Dressing
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. raw honey use maple syrup to make this vegan
- 2 Tbsp. lemon juice
- 1 tsp. turmeric powder
- 1 tsp. cayenne powder
- Himalayan sea salt to taste
- Black pepper to taste
Instructions

Chop carrots into thin slices — the thinner the better. Tip: You can also use a spiralizer, box grater or mandolin to make this easier. Transfer to large salad bowl.

Slice stem part of the cilantro off. Fold leaves into bundle and finely chop.

Add half the cilantro and all of the raisins into the bowl with the carrots and mix thoroughly.

In small bowl, whisk together dressing ingredients.

Pour dressing over salad and mix thoroughly.

Top with remaining cilantro and a drizzle of tahini. Chopped pistachios are a great addition as well.
