Fennel is a wonderful vegetable that’s often overlooked. It resembles a slightly flattened onion bulb under a green stalk topped with dill-like fronds. When raw, it has the crunch of celery with notes of sweet anise. When roasted (like in this easy recipe), fennel caramelizes at the edges and its sweetness emerges, lessening its gentle licorice flavor.
Even the skeptical can be won over with fennel’s unique, delicate flavor. We think it’s past time to give fennel some love. With its high fiber content and heart-healthy properties, it’ll love you back.
