Quest Bar Apple Dumplings

You can take the girl out of the country, but you can’t take the country out of the girl. So when apple dumplings call your name, give a nod to your roots without giving up your new-found fitness. You don’t have to omit flour or sugar. You’ll just use more natural, wholesome flours and sweeteners. Though unbelievably healthier than her recipe, these Quest Bar Apple Dumplings would get Grandma’s approval.

Low-Calorie Apple Dumplings

Quest Bar Apple Dumplings

Ingredients

1 Apple Pie Quest bar
1 scoop vanilla protein powder
½ cup almond flour
½ cup whole wheat pastry flour
½ green apple (half of it diced and half of it sliced)
6 Tbsp. granulated stevia
½ tsp. baking powder
½ tsp. cinnamon
3 Tbsp. coconut oil
¼ tsp. vanilla extract
2 large eggs

Directions

  1. Preheat oven to 350 degrees F and line a baking pan with foil. Spray it with non-stick cooking spray.
  2. In a large mixing bowl, add eggs and whisk until foamy.
  3. Add coconut oil and vanilla extract and whisk together.
  4. Add protein powder, flours, stevia, baking powder, cinnamon and diced apples. Stir until well-combined.
  5. Place batter in the fridge for 30 minutes.
  6. Meanwhile, cut the Quest bar into 8 equal pieces and cut apple slices to match the size of the Quest bar pieces.
  7. Place 1 apple slice on top of each Quest bar piece.
  8. Remove batter from fridge. Slightly wet your hands and then wrap about 3 tablespoons of batter around each apple-bar piece to form a dumpling. Makes about 8 dumplings.
  9. Bake dumpling for 10-12 minutes. Remove and let cool before enjoying.
