No-Bake Pistachio-Carob Chip Oatmeal Bars

Like little green divas, pistachios are hard to coax from their shells. They’re flashier in color, higher in price and can rock a recipe like no other nut. So get crackin’! These better-for-you oatmeal bars are packed with pistachio power and free of processed ingredients, giving you a nutritious grab-and-go breakfast or healthified anytime treat.

Recipe: Pistachio Oatmeal Bars

Ingredients

3/4 cup dates, pitted
1/2 cup rolled oats
1/4 cup shredded coconut
1 cup pistachios
Dash of vanilla
3 Tbsp. maple syrup
1 cup carob chips

Directions

  1. In food processor, combine all ingredients and blend until combined. Add water as needed to help create a dough-like consistency.
  2. Line a baking dish with parchment paper. Scoop mixture onto dish, evenly distribute and flatten.
  3. Spread the carob nibs on top and gently press down.
  4. Freeze for up to two hours before serving.
