Single-Sized Chocolate-Strawberry Layered Cake

Sometimes, not sharing is caring. Between housework, work-work and working on your fitness goals, it’s crucial to take care of Y-O-U. Before tucking into bed, find a few minutes to soak in a hot bubble bath, massage some coconut oil into your skin and dive fork first into this rich chocolate-strawberry cake. This recipe makes one ramekin-sized cake, so those chewy, brownie-esque layers are all yours.

Recipe: Single-Sized Chocolate-Strawberry Layered Cake

Makes 1 cake, 2 servings

Macro for ½ cake: 229 calories | 16.1 g protein | 26.1 g carbs | 12.1 g fiber | 9.8 g fat | 1.1 g sugar

Ingredients:
1 Chocolate Brownie Quest Bar
½ cup oat flour
1 Tbsp. almond flour
2 Tbsp. xylitol
½ Tbsp. liquid coconut oil
1 egg white
1 strawberry

Directions:
1. Preheat oven to 350F and spray a ramekin with nonstick cooking spray.
2. Place all ingredients (except the Quest Bar) in a blender and process until smooth and well combined.
3. On a greased, microwave-safe plate microwave the Quest Bar for 12 seconds.
4. Using a rolling pin, smooth out the heated Quest Bar. With a small cookie cutter or a cup, cut out two round pieces from the Quest Bar “dough.”
5. Set one of the round pieces on the bottom of the ramekin, spoon ½ of the strawberry cake batter on top. Place the second round Quest Bar piece over that layer, and top it off with the remaining strawberry cake batter.
6. Bake for 18-22 minutes. Let the cake cool before removing from the ramekin.
7. Melt creamy chocolate-coconut peanut butter and drizzle over top, if desired.
