White Chocolate Chip & Cranberry Pancakes

Chocolate chips make everything better, from classic chunky cookies to ooey-gooey brownies to dessert-worthy overnight oats. Go the dark, cacao or carob route and you don’t even have to feel guilty about tossing them in. If you want white chips, though, it’s harder to find healthy versions, free of artificial flavorings and hydrogenated oils. One brand, SunSpire, fits the bill with their vanilla-colored, creamy-textured baking bits, made with pure cocoa butter and whole milk powder. Paired with cranberries in these pancakes, you’re in for a real breakfast treat!

White Chocolate Chip-Cranberry PancakesCranberry & White Chocolate Chip Pancakes

Makes six 4” pancakes

Ingredients

1 cup oat flour or ground oats
1 cup unsweetened vanilla almond milk
1 scoop vanilla protein powder
2 eggs whites
¼ cup non-fat Greek yogurt
1 tsp. baking powder
1/4 tsp. butter extract
½ tsp. vanilla
¼ cup white chocolate chips
¼ cup dried cranberries

Directions

  1. In large bowl, mix together all ingredients except white chocolate chips and cranberries. Gently stir in white chocolate chips and cranberries.
  2. Spray griddle or skillet with non-stick cooking spray.
  3. Pour about ¼ cup of batter per pancake onto griddle or skillet.
  4. Cook pancakes until light golden brown, flipping half way through.
