Cranberry & White Chocolate Chip Pancakes
Makes six 4” pancakes
Ingredients
1 cup oat flour or ground oats
1 cup unsweetened vanilla almond milk
1 scoop vanilla protein powder
2 eggs whites
¼ cup non-fat Greek yogurt
1 tsp. baking powder
1/4 tsp. butter extract
½ tsp. vanilla
¼ cup white chocolate chips
¼ cup dried cranberries
Directions
- In large bowl, mix together all ingredients except white chocolate chips and cranberries. Gently stir in white chocolate chips and cranberries.
- Spray griddle or skillet with non-stick cooking spray.
- Pour about ¼ cup of batter per pancake onto griddle or skillet.
- Cook pancakes until light golden brown, flipping half way through.
