Salted Caramel Brownie Pies

Peanut butter and chocolate aren’t the only sweet-and-salty duo. Contrary to popular belief (and peanut butter’s persuasive allure), you can enjoy a smoother, silkier alternative to satisfy a fix for salt. The answer is salted caramel, but there’s one caveat. Caramel tends to be all sugar and no nutrition. That’s why these bite-sized brownie pies are filled to the brim with the goodness of fruit that’s made to fake the texture and flavor of caramel. You’ll never feel guilty digging into this dessert – or cheating on your beloved peanut butter.

 Brownie Cups Filled with a Healthy Salted Caramel Recipe

Salted Caramel Brownie Pies

Makes 4 mini brownie pies
Macro for 1 brownie pie:
100 calories | 5.1 g protein 21.5 g carbs | 6.3  g fiber | 1.6 g fat | 13.7 g sugar

Ingredients

1 Chocolate Brownie Quest Bar
4 pitted dates
2 Tbsp. unsweetened almond milk
2 Tbsp. Torani Salted Caramel Syrup (optional)
1 Tbsp. sugar-free maple syrup
½ tsp. salt

Directions

  1. Preheat oven to 350°F and cut Quest Bar into 4 even pieces.
  2. On a greased plate, microwave Quest Bar pieces for 10 seconds. Mold each of the 4 melted pieces into a greased mini pie pan.
  3. Bake the Quest Bar pie shells for 6 minutes. Remove and let cool while making filling. and spray a ramekin with nonstick cooking spray.
  4. In a small saucepan over medium heat, combine all other ingredients and cook until dates soften, about 10 minutes.
  5. In a blender or food processor, blend the caramel mixture until completely smooth and silky.
  6. Pour and divide caramel filling among 4 cooked Quest Bar pie crusts.
  7. Top with chocolate chips, if desired, and serve.
