Pumpkin Peanut Butter Cups

If only they recommended eight cups of peanut butter a day, I’d be set. There are literally countless ways to enjoy this nutty spread (let me not count them, ‘cause you’d be reading for days). But one of my favorite renditions of peanut butter is in a chocolate-covered cup. Add pure pumpkin to the mix, and you’re in for an extra shot of creamy, sugary and savory. Believe me when I say these Pumpkin Peanut Butter Cups will go down like water.

Recipe: Pumpkin Peanut Butter Cups

Ingredients

2/3 cup stevia-sweetened dark chocolate chips
½ cup pumpkin puree
1/3 cup creamy peanut butter
2 Tbsp. coconut sugar
1 Tbsp. coconut oil

Directions

  1. In a small bowl, microwave chocolate chips and coconut oil for 1 minute. If still slightly chunky, stir until incorporated and smooth.
  2. Pour a thin layer of melted chocolate into the bottom of greased or paper-lined muffin cups. Place in freezer for about 5 minutes.
  3. In a medium bowl, combine remaining ingredients and stir until mixed through.
  4. Spoon a dollop of pumpkin mixture on top of hardened chocolate layer.
  5. Top with remaining chocolate until all cups are coated. Return to freezer to set.
  6. Eat your servings!
