Truffles: some are round and some are square. A few may be filled with a rich crème, while others are more like a moist cake. That element of surprise is what makes these bite-sized desserts such a treat. But what’s even sweeter than presenting your favorite person with a heart-shaped box of truffles is actually making them yourself. You’ll be shocked by what a cinch it is (no baking required!), and your sweetie will light up more than you ever expected.
Strawberry Cake Protein Truffles
Makes 18 truffles

Truffles
¼ cup gluten-free oats
 ¼ cup coconut flour
 1 scoop vanilla protein powder
 ½ cup sugar-free strawberry jam
 ¼ Sweet Spreads Vanilla Cupcake Coconutter
 2 Tbsp. xylitol (or stevia)
 2 Tbsp. sugar-free maple syrup
Toppings
Xylitol
 White chocolate chips
 Red food coloring
 Sprinkles
Directions
- Line a flat baking sheet with parchment paper and set aside.
- In a food processor, combine all truffle ingredients except maple syrup and blend for about 1 minute. Mixture should look crumbly but holds together.
- Add maple syrup and blend until smooth and well-combined.
- Using your hands, pull out about 2 tablespoons of batter and roll into a ball. Place on prepared baking sheet and repeat until all batter is gone, about 18 truffles.
- Roll each truffle in xylitol and place back on parchment paper.
- In a small bowl, microwave white chocolate chips for 10 seconds and stir until smooth and melted.
- Add 2 drops of red food coloring to melted white chocolate and stir to fully incorporate the coloring. You should get a pink hue.
- Drizzle white chocolate over truffles, add sprinkles and you’re done!
Keep truffles in the fridge until you’re ready to give them to your sweetheart. Present them in a heart-shaped box from the craft store or piled in a martini glass. Cheers to love!
