Truffles have a certain prestige about them, most often reserved for romantic occasions like an anniversary or Valentine’s Day. Just to get your hands on these tiny treats usually requires visiting a specialty sweets shop and peering through panes of glass. It’s much ado over nothing you can’t make yourself. Whenever you’re in the mood for a bite-sized ball of joy, grab every coconut ingredient in the cupboard and start mixing. Once you’re done rolling and dipping in dark chocolate, show yourself some love by eating as many as your heart desires!
Ingredients
2 scoops vanilla protein powder
2 cups coconut flakes
1/3 cup coconut milk
2 Tbsp. coconut butter
2 Tbsp. coconut oil
1 cup dark chocolate chips
Directions
- Line a baking sheet with parchment paper and set aside.
- In a medium bowl, stir together protein powder, coconut flakes, coconut milk and coconut butter (first four ingredients) until thoroughly combined.
- In a separate bowl, add coconut oil and chocolate chips (adjust amounts, if needed) and microwave for about 45 seconds. Stir until completely melted and smooth.
- Roll coconut mixture into balls, using about 1 ½ tablespoons per truffle.
- Dunk coconut balls into melted chocolate, being sure to fully coat each ball. Place truffles on prepared baking sheet and put in the fridge to set, or start enjoying immediately ‘cause why not?
