Some things you wait 12 months to enjoy, like Halloween candy or Thanksgiving mashed potatoes. Pecan pie is no different…until now. These cleaned-up cookie bars will make the pecan pie lovers in your life jump for joy – especially when they see how the gooey filling runneth over. Just imagine perfectly portioned squares, oozing with home-for-the-holidays flavor. It’s worth waiting for, but why would you?

Heavenly Pecan Pie Dessert Bars

Ingredients

Crust

1/3 cup coconut sugar
½ cup melted coconut oil
2 Tbsp. honey
½ tsp. vanilla extract

Filling

½ cup coconut nectar
¼ cup coconut oil
1 tsp. vanilla extract
½ tsp. salt
2 cups pecans , crushed
2 Tbsp. almond milk
2 Tbsp. flax meal
1 Tbsp. cornstarch

Directions

  1. Preheat 350 degrees F and coat an 8” x 8” baking dish with non-stick cooking spray.
  2. In a large bowl, stir together all crust ingredients until well-combined.
  3. Pour mixture into prepared baking dish and bake for 20 minutes. Remove and set aside to cool.
  4. In a saucepan over high heat, bring coconut nectar, coconut oil, vanilla and salt to a boil. Reduce to simmer for a few minutes. Remove from heat while you finish the filling.
  5. In a small bowl, whisk together flax meal, cornstarch and almond milk. Pour mixture into saucepan, stirring to combine all ingredients. Add pecans and stir to combine.
  6. Pour filling mixture over crust and bake for another 35-40 minutes.

Once cooled, slice and serve!
