Winter is typically time for slow cookers to camp out on countertops. Who doesn’t prefer snuggling under a blanket while a hearty stew simmers in the kitchen? But with hotter months here, crockpots can come in just as handy. Spend your time poolside while a fiery dinner cooks itself with just five quick minutes of prep time. Towel off, pull up a picnic chair and roll a burrito with this spicy rice and chicken mix for a surprise summertime fiesta the whole family will love.

Slow-Cooker Spanish Chicken & Rice

Serves 6

Ingredients

1 pkg. gluten-free Spanish rice mix
1 cup chopped onion
1 cup chopped bell pepper
1 lb. boneless chicken breast or thighs
4 cups water

Directions

  1. In crock pot, combine rice mix, onion, bell pepper and water and stir to combine
  2. Place chicken on top.
  3. Cover crock pot with lid and set to low. Cook mixture for 6-8 hours.
  4. Shred chicken before serving.
