Zesty lemon cookies aren’t one of them. The fresh squeeze of lemon is worth more than money can buy. Besides, when you make your own sweet glaze, you get to lick the bowl – in a very ladylike fashion, of course.
Lemon Sugar Tea Cookies
Makes 14 cookies

Ingredients
Cookies
2/3 cup gluten-free oat flour
1 scoop vanilla protein powder
2 Tbsp. xylitol
1 tsp. lemon zest
1 ½ Tbsp. lemon juice
¼ cup melted coconut oil
¼ cup coconut milk
¼ tsp. baking powder
¼ tsp. vanilla extract
¼ tsp. butter extract
Glaze
6 Tbsp. coconut milk
½ scoop vanilla protein powder
Juice of ½ lemon
Directions
- Preheat oven to 350 degrees F and line a baking sheet with foil. Coat foil with non-stick cooking spray.
- In a large bowl, mix together flour, protein powder, xylitol, lemon zest and baking powder until well combined.
- Add remaining ingredients, stirring until batter is thick and smooth.
- Using a small ice cream scooper or spoon, scoop about 2 tablespoons of batter onto prepared baking sheet. Repeat until you have about 14 cookies.
- Using a fork, flatten each cookie and make a crisscross pattern. Bake 10-14 minutes, or until golden brown.
- While cookies cool, prepare the glaze. In a small bowl, whisk together all glaze ingredients until smooth. Add more milk or protein powder, adjusting to get the consistency you want.
- Drizzle glaze over cookies and serve immediately.
