Baked Oatmeal with Blueberries, Pecans and Golden Berries

Makes 3 small servings

Ingredients

1 cup rolled oats
¼ cup blueberries, plus extra for topping
1/8 cup golden berries
1/8 cup pecans, chopped, plus extra for topping
2 Tbsp. coconut sugar
1 Tbsp. mesquite powder
½ Tbsp. maca powder
¼ tsp. cinnamon
¼ tsp. vanilla bean powder
1 banana, mashed
¾ cup almond milk
Maple syrup, for topping

Directions

  1. Preheat oven to 350 degrees F. Place three small ramekins or oven-safe bowls on a baking sheet.
  2. In a medium bowl, mix together oats, coconut sugar, mesquite powder, maca, cinnamon and vanilla.
  3. In a small bowl, mix mashed banana with almond milk. Pour milk mixture into the dry. Mix until well combined.
  4. Gently fold in blueberries, golden berries and pecans. Distribute mixture evenly into the three bowls.
  5. Bake for 20-25 minutes until golden brown. Serve drizzled with maple syrup and topped with extra blueberries and pecans, if desired.
