You’re not that emotional, but you certainly have a soft spot for cookies. Who doesn’t? The perfect little rounds can welcome a new neighbor as easily as they soothe a teenage heartbreak. Of course, all that great magic is in the mix. And when the mix includes a heavy helping of chocolate…well, that never hurts. (Cue the happy tears.)

Soft Batch Dark Chocolate Protein Cookies

Makes 12 cookies
Macros per cookie: 145 calories | 6.9 g protein | 18.2 g carbs | 7 g fat | 1.6 g sugar | 2.1 g fiber

Ingredients

2 scoops ARO Chocolate Whey Protein Powder
1 cup buckwheat flour (or whole wheat flour)
½ cup Vitacost Xylitol
¼ cup dark cocoa powder
¼ cup dark chocolate almond butter (or nut butter of choice)
¼ cup unsweetened chocolate almond milk
3 Tbsp. Vitacost Liquid Coconut Oil
1 tsp. Vitacost Organic Pure Vanilla Extract
1 whole egg

Directions

  1. Preheat oven to 350 degrees F and line a sheet pan with parchment paper.
  2. In a small bowl, whisk together almond butter, almond milk, coconut oil and vanilla extract until smooth.
  3. In a separate large mixing bowl, stir together protein powder, xylitol and cocoa powder until mixed through.
  4. Pour wet ingredients into dry and stir until thoroughly combined.
  5. Using an ice cream scoop or spoon, drop about 3-4 tablespoons cookie dough onto sheet pan. Repeat until you have 12 cookies.
  6. Slightly flatten each cookie and bake approximately 14 minutes, or until edges begin to crisp.
