½ cup semi-sweet chocolate chips
1-½ Tbsp. coconut oil
1 Tbsp. maple syrup
Shredded coconut, optional
Directions
- In food processor, pulse mango, coconut milk and maple syrup until combined. Adjust ingredients depending on desired sweetness.
- Pour mixture into ice pop mold and freeze for 1.5 hours. Remove from freezer and insert a wooden stick into each ice pop. Return to freezer and freeze until ice pops set.
- Run mold under warm water for few seconds and gently pull out each ice pop.
- Using a double boiler or a microwave, melt chocolate chips and coconut oil until smooth.
- Dip each ice pop into melted chocolate, garnish with shredded coconut (immediately as the chocolate hardens quickly).
