Paleo Blueberry-Avocado Power Smoothie

If you’re trying to cut back, these seasonal beverages can easily tempt no matter how strong your willpower. But saying “no” to these festive drinks doesn’t mean you can’t partake in sweet, tasty treats with everyone else! All you have to do is shift your focus from sweet, to fat. And by fats, I’m talking about “healthy fats.

By incorporating healthy fats, such as avocado and coconut oil, you can make a smoothie with an incredible mouthfeel, decadent flavor profile and a significant amount of nutrition at the same time. Follow the recipe below or use it as a template to create your own signature version, based on what’s in season where you are.

Paleo Blueberry-Avocado Power Smoothie

Ingredients

2 cups coconut water
1 small, ripe avocado
2 cups blueberries
2 soft-boiled eggs, chilled
1/2 cup Artisana Organics coconut butter, melted
1/4 cup toasted coconut, crushed
Freshly ground nutmeg, to taste
Himalayan salt, to taste
Crushed ice

Instructions

  1. In a high-speed blender, combine coconut water, avocado, blueberries, eggs, coconut butter and nutmeg.
  2. Add ice to create your preferred texture.
  3. Pour into two chilled glasses.
  4. Garnish with coconut, nutmeg and salt.
