Almond Butter-Mango Marinade

This is not a tropical illusion. Even with the sun setting on summer fun, you can still enjoy the tangy taste of mangoes. Using natural fruit preserves, this lively mango marinade can make a year-round appearance at dinner. Whether the grill’s going or you’re hibernating inside with a hot oven, you’ll now have a go-to flavoring for an otherwise basic chicken recipe.

Almond Butter-Mango Marinade

Ingredients

1 lb. boneless, pasture-raised chicken thighs or breasts
½ cup raw almond butter
¼ cup natural mango preserves
¼ cup organic olive oil
2 cloves garlic
Dash coconut aminos sauce

Directions

  1. In a food processor, combine all ingredients (except chicken) and blend until smooth.
  2. Divide marinade in half, placing one part in the fridge to save.
  3. Spread the other half over raw chicken and marinate 30 minutes on the countertop, or up to six hours covered tightly and stored in the fridge.
  4. Grill or broil chicken 20 minutes, or until internal temperature reaches 150 degrees F.
  5. Remove from heat, tent in foil and let sit 10 minutes, or until internal temperature reaches 160 degrees F.
  6. Serve chicken with reserved marinade and your favorite raw veggies.
