Non-GMO Almond Cookies Recipe

Makes 10 cookies

Ingredients

1/2 cup almond meal flour
¼ cup coconut flour, plus 2 Tbsp.
1 scoop vanilla protein powder
¼ cup almond butter
¼ cup light coconut milk
3 Tbsp. coconut nectar
½ cup egg whites

Directions

  1. Preheat oven to 325°F, line foil on a sheet pan and coat foil with nonstick cooking spray.
  2. Add almond butter, egg whites, coconut nectar and coconut milk in a mixing bowl. Using a hand-held mixer, blend until smooth and well combined.
  3. Add the remaining ingredients and mix until well combined.
  4. Using a spoon, drop cookie dough onto sheet pan, making 10 even cookies.
  5. Bake 10-12 minutes. Let the cookies cool, and then drizzle with more almond butter. It’s easier to drizzle if slightly melted (about 20 seconds in the microwave).
