Almond-Stuffed Dates with Coconut Flakes

This snack comes together so easily, I made it after setting up camp in the great outdoors. Give it a go and get creative! You can customize this recipe to suit your preferences. Another perk? Snack Recipe: Dates with Almond & Coconut

Almond-Stuffed Dates with Coconut Flakes

Ingredients

Almonds
Almond Butter
Desiccated Coconut
Dates

Directions

  1. Carefully pull apart each date and remove the pit. (Use dates at room temperature.)
  2. Place a raw almond and about ½ teaspoon of almond butter inside the date and squish it back together.
  3. Peel off the outside layer of the date and roll date in coconut.
  4. Store in an airtight container in the fridge for up to 2 weeks. Freeze any additional leftovers. (Tip: they’re an amazing addition to smoothies!)
