Many quintessential camping foods are off-limits to vegans. Luckily, there are some great on-the-go snacks suitable for a plant-based lifestyle, like these Almond-Stuffed Dates. This snack comes together so easily, I made it after setting up camp in the great outdoors. Give it a go and get creative! You can customize this recipe to suit your preferences. Another perk? You can make as many or as few as you want! If you’ve only got a brief moment, just make a couple of these bite-sized treasures to fuel you along.
Almond-Stuffed Dates with Coconut Flakes
- Carefully pull apart each date and remove the pit. (Use dates at room temperature.)
- Place a raw almond and about ½ teaspoon of almond butter inside the date and squish it back together.
- Peel off the outside layer of the date and roll date in coconut.
- Store in an airtight container in the fridge for up to 2 weeks. Freeze any additional leftovers. (Tip: they’re an amazing addition to smoothies!)
