Apple Cinnamon Protein Bread

It’s true. The apple doesn’t fall from the tree, but that’s because there’s no time to waste once the seasons begin to change. Hurry up and gather those apples! You have some dicin’ and slicin’ to do if you’re going to enjoy one of autumn’s juiciest, most versatile delights. Take this gluten-free sweet bread, for instance. The apples taste crisp and sweet – like a true fall day. The irony is it will fill you up as well as a protein shake, making it a healthy choice any time hunger strikes.

Cinnamon & Apple Bread Recipe

Ingredients
1 cup oat flour
½ cup almond flour
½ cup coconut sugar
1 scoop cinnamon protein powder (or flavor of your choice)
1 ½ red apples, diced
½ cup unsweetened applesauce
3 egg whites
1 Tbsp. coconut oil, melted
1 tsp. cinnamon
1 tsp. baking powder

Directions

  1. In a large bowl, combine all ingredients except apple chunks.
  2. Add chunks of 1 whole apple to the mix.
  3. Pour mixture into a greased loaf pan. Top with remaining apple pieces.
  4. Bake at 350°F for approximately 45 minutes, or until a toothpick comes out clean.

Baking note: The bread will be very dense. If the edges start to burn before it’s cooked all the way through, simply cover with foil until it’s done and desired texture is achieved.
