Apple Pie Donuts with Icing

Fetching bushels of apples is a fun family activity in the fall. But when this classic fruit isn’t in peak season, turn to dried apples and naturally apple-flavored foods to get your fill. This recipe for apple pie donuts features apple ingredients of all kinds – from an apple-spiked protein bar to dried fruit pieces. You’ll have to save the orchard trip for later and bring your family to the kitchen, instead. But I have a feeling that everyone will “appily” help out.

Makes 8 donuts

Donuts

1 Quest Apple Pie Quest Bar, torn into pieces
1 scoop Quest Vanilla Milkshake Protein Powder
¼ cup Nutiva Coconut Flour
4 oz. Fuji apple, finely chopped
2 Tbsp. unsweetened vanilla almond milk
4 oz. Yoplait 100 Calorie Greek Apple Pie Yogurt
1 tsp. baking powder
½ tsp. salt
¼ tsp. cinnamon
¼ tsp. vanilla extract

Icing

1 Tbsp. Sweet Spreads White Chocolate Coconutter
1 Tbsp. Sweet It Powder
1 Tbsp. Swerve Confectioners Style Sweetener
1 Tbsp. Sweet It Syrup
4 oz. fat-free cream cheese
¼ tsp. almond extract

Topping: Bob’s Red Mill Dried Diced Apple Pieces (optional garnish)

Directions

  1. Preheat oven to 375 degrees F and coat a donut pan with non-stick cooking spray.
  2. In a large bowl, microwave Quest Bar and almond milk for 30 seconds, stir until smooth – repeat if necessary.
  3. Add remaining donut ingredients and stir until mixed through and smooth.
  4. Pour batter into prepared donut pan and bake 8 minutes, or until a toothpick comes out clean.
  5. Let donuts cool while you prepare the icing.
  6. In a small bowl, microwave Sweet Spreads White Chocolate Coconutter with Sweet It Syrup for 30 seconds and stir until smooth.
  7. Transfer mixture to a high-speed blender or food processor. Add remaining icing ingredients and blend until smooth. Makes about 9 tablespoons.
  8. Use about 1 teaspoon of icing to glaze each donut. Garnish with dried diced apple bits, if desired. Enjoy!
