You can freely forgo the pastry that looks like it came straight from the pages of Southern Living. With a much healthier nutritional profile, apple pie protein muffins are not only more practical but require absolutely zero handy work. Let freedom eat!

Apple Pie Protein Muffins Recipe

Apple Pie Protein Muffins

Makes 10 muffins
Macros per serving: 115 calories | 9.9 g protein | 14.8 g carbs | 2.3 g fat | 5.4 g sugar | 1.5 g fiber

Ingredients

½ cup plain Greek yogurt
¼ cup unsweetened almond milk
2 Tbsp. honey
2 eggs
2 scoops vanilla whey protein powder
1 cup oat flour
1-1/2 tsp. cinnamon
½ tsp. nutmeg
¼ tsp. salt
1 cup apples, chopped

Directions

  1. Preheat oven to 350 degrees F and prepare a muffin pan with 10 paper liners.
  2. In a large bowl, whisk together yogurt, milk, honey and eggs until smooth.
  3. Add protein powder, oat flour, cinnamon, nutmeg and salt. Stir until batter is well combined.
  4. Gently fold in chopped apples to incorporate.
  5. Evenly distribute muffin batter among paper muffin cups. Bake 20-24 minutes, or until a toothpick comes out clean.
  6. Let cool before eating.
