Apple Pie Protein Waffles

No matter what the box says, you’ll never get the crisp, fluffy, melt-in-your-mouth texture in a toaster pop-up waffle as you will with a homemade one. Tucked in the nooks and crannies of those frozen discs also lurk artificial flavors, colors and preservatives that put a damper on a healthy breakfast. The next time a waffle mood strikes, use this recipe to mix up a nutritious, protein-padded batter that turns out a dessert-worthy morning meal every time. The cinnamon-sprinkled apple pie topping is the cherry on top!

Apple Pie Protein Waffles

Apple Pie Protein Waffles

Makes 4 servings

Ingredients

Waffles
1 scoop vanilla protein powder
½ tsp. baking powder
1-1/8 cups oat flour
½ cup unsweetened vanilla almond milk
4 eggs whites (or ¾ cup liquid egg whites)
½ tsp. cinnamon
½ tsp. vanilla
½ tsp. butter extract

Topping
1 apple, chopped
¼ tsp. cinnamon
1 packet stevia
1 tsp. coconut oil
Slivered almonds

Directions

  1. Preheat waffle iron, coating with non-stick cooking spray (be generous!).
  2. In a large bowl, mix together all dry waffle ingredients.
  3. In a food processor, mix together all wet waffle ingredient; blend well.
  4. Pour wet mixture into dry mixture and stir to combine.
  5. Cook waffles in waddle iron following manufacturer’s directions for batter amount and cooking time (approximately five minutes).
  6. To make topping, heat coconut oil over medium heat in a sauce pan.
  7. Add in apple and coat with coconut oil. Sprinkle apples with stevia and cinnamon.
  8. Continue cooking until apples are tender.
  9. Top waffles with apples, more cinnamon and almonds.
