Spiked with juicy blueberries, crunchy pecans and flavorful, good-for-you spices like cinnamon and maca, this dish will get you up and keep you going all day long.
Baked Oatmeal with Blueberries, Pecans and Golden Berries
Makes 3 small servings
Ingredients
1 cup rolled oats
¼ cup blueberries, plus extra for topping
1/8 cup golden berries
1/8 cup pecans, chopped, plus extra for topping
2 Tbsp. coconut sugar
1 Tbsp. mesquite powder
½ Tbsp. maca powder
¼ tsp. cinnamon
¼ tsp. vanilla bean powder
1 banana, mashed
¾ cup almond milk
Maple syrup, for topping
Directions
- Preheat oven to 350 degrees F. Place three small ramekins or oven-safe bowls on a baking sheet.
- In a medium bowl, mix together oats, coconut sugar, mesquite powder, maca, cinnamon and vanilla.
- In a small bowl, mix mashed banana with almond milk. Pour milk mixture into the dry. Mix until well combined.
- Gently fold in blueberries, golden berries and pecans. Distribute mixture evenly into the three bowls.
- Bake for 20-25 minutes until golden brown. Serve drizzled with maple syrup and topped with extra blueberries and pecans, if desired.
