Any way you slice it, pizza is a people-pleaser. There’s a pie for every taste bud, every party theme and every meal of the day. While the weather is warm and visions of barbecue are dancing in your head, you gotta try this BBQ chicken flatbread. The personal-sized tortilla “crusts” and healthy homemade sauce make it a light delight. That means you can gobble up a few and be pleasantly fueled for your next workout.
Ingredients
3 Food for Life Ezekiel Tortillas
4 oz boneless, skinless chicken breast, cooked and shredded
Shredded mozzarella cheese
Feta cheese crumbles
¼ cup purple onion, sliced
½ cup no-salt-added tomato sauce
2 Tbsp rice vinegar
1 Tbsp water
2 tsp liquid smoke
1 tsp stevia
1 tsp onion powder
1 tsp garlic powder
½ tsp paprika
½ tsp garlic salt
Pinch of ground red pepper
Fresh cilantro to top (optional)
Directions
- Over a gas burner or grill plate, toast tortillas until crispy – just a few seconds.
- In a small bowl, combine tomato sauce, vinegar, water, liquid smoke, stevia and all spices (except cilantro) and stir until thoroughly blended.
- Divide sauce among tortillas and spread to coat.
- Top tortilla pizzas with chicken, onion and cheese. Sprinkle on cilantro pieces if desired.
- Eat one or eat them all. You’re now officially fueled for your next workout.
