Berry & White Chia Protein Crumble

Colors run deep, especially when they’re berry stains on a white shirt. Don’t let that deter you, though. Summer’s the season to enjoy strawberries, blackberries and the like. You just have to wear the stains like a badge of honor. After all, you’re proud to show off your tried-and-true colors, because it means you’ve been dipping your spoon into this sweet berry-and-chia-seed crumble. It comes fully loaded with fresh fruit, protein and gluten-free oats, so you can enjoy it day or night, for breakfast or dessert.

Berry & White Chia Protein Crumble

Makes 4 servings
Macros per serving: 244 calories | 14.8 g protein | 29 g carbs | 10.8 g fat | 7.1 g sugar | 7 g fiber

Ingredients

2 scoops ARO Natural Vanilla Whey Protein Complex PLUS
1/3 cup Vitacost Gluten-Free Rolled Oats
2 Tbsp. Vitacost Non-GMO White Chia Seeds
3 Tbsp. Vitacost Xylitol
1 tsp. cardamom
2 Tbsp. Vitacost Extra Virgin Coconut Oil
2 cups strawberries
1-1/2 cups blackberries

Directions

  1. Preheat oven to 350 degrees F and coat four ramekins with non-stick cooking spray.
  2. In a large box, stir together protein powder, oats, chia seeds, xylitol and cardamom until well combined.
  3. In a small bowl, microwave coconut oil until melted. Pour into oat crumble mixture.
  4. Carefully fold in berries, and then stir until all ingredients are well incorporated.
  5. Evenly distribute crumble mixture into four ramekins and bake 32 – 36 minutes, or until fruit begins to bubble and crumble turns golden brown.
  6. Let cool 10 minutes before serving.

Substitution notes:

  • Can swap coconut oil for ghee or regular butter
  • Can swap xylitol for baking stevia or white cane sugar
